I was diagnosed 3 days ago and am so confused about how I got this. My boyfriend has a history of cold sores, but was not having a breakout at the time of oral sex. We ALWAYS use a condom during vaginal sex and he has never infected anyone and neither have I. What am I missing?

there's such a thing as asymptomatic shedding (transmitting the virus when NOT having an oubreak). try using the search feature on this site to find more posts about it. It's most likely to infect someone when having an outbreak, but is still possible when not.
