From my understanding, herpes tests are based on HSV antibodies, once you get the antibodies, they're with you for life.

Your body creates a "recipe" for antibodies but, as I understand it, they are not always present unless there is viral activity.

If the virus was completely destroyed and no longer in the body there would be no reason to have antibodies present.

In other words our bodies have many tasks to complete to keep us healthy and alive. There is no reason for it to expend energy creating antibodies for something that is no longer a risk. Our immune system prioritizes risks and deals with the immediate problems.
