Chicken Noodle Soup...it worked for me

Question:
Yesterday i decided to feed myself...which hasn't been so easy with this issue that has had me in the dumps for over a month.

I thought I would share....for those who need a recipe.

Chicken Barley (or noodle or dumpling) Soup.
Big batch.

1 pound (give or take) carrots dice how you want.
1 red onion dice how you want
1 sweet onion...see above
1 or less head of celery...like I said...see above.
1/2 bag of barley, or 1/2 box or pasta.
1 chicken...i used a store bought roasted and boiled it again so that it would easily shred...or whatever you got.
s&p

sweat the veggies in the big pot with butter or evoo.
chicken stock to the top...your own or whatever.
simmer...30 min?
add shredded or cooked chicken.
add your starch...simmer till done...pasta and barley cook differently.
it cooks in the soup...or stooup as I call it.

...or just get yourself so jewish penasyllin(sp).

i finally slept ok and seemed to have snapped out of the funk...for today.
and i made plenty for leftovers....to go with my new vitaman suppliments.

I feel so much better today.

Some yummy comfort food almost always makes me feel better, and feeling good and eating something healthy is always good for the soul (and probably helps out with the H, too... since so much of it is stress related)!

When I was a kid, and any of us were sick or hurt, my mother always made spaghetti. That was her chicken soup, and for some reason it always made us feel better. I think because she put love in it. :-)
