I need some advise. What's the best software for manipulating and running loops in a worship service? Which loop collections would come the closest to Lincoln Brewster? What kind of triggering devices should I use?

Hmmm, good question.
I was about to begin experiementing with using loops with my team.
I've done it before at a prior church and the drummer had complete control over the loops via hard-disc-based multitrack machine and a foot controller.
It worked really well (it helped that he was an excellent drummer/musician).
In the near future I'm going to look into using Apple's GarageBand via a Mac laptop and an as-yet-undetermined USB-based foot controller.
