Do you mean picking individual notes right? Third Day is one of my favorite acoustic guitar and electric guitar bands... Songs like Love Song or You Are Mine have some really good picking... Jars Of Clay is another one of my favorite acoustic rock bands, songs like Frail are great fingerpicking exercises..
